The One Homemade Spice Blend You’ll Want to Put on Everything

There is a word in Thai that translates directly to "intensely delicious." That word is zabb. It’s a slang term used to describe food that is fiercely spicy, vibrant, and packed with flavor. I wanted to replicate that exact sensation at home, so I crafted the ultimate homemade spice blend.

This DIY Zabb seasoning hits every single part of your palate. It's salty, spicy, sweet, and acidic all at once.

The Secret Ingredient for Crunch

Most seasoning blends are just fine powders. But the secret to a true Thai-style blend is texture. We started by toasting raw sticky rice in a dry pan over medium heat. You want to keep it moving until the grains turn a beautiful, deep golden brown.

Once it cooled down, I poured the toasted rice into a heavy stone mortar and pestle and pounded it into a coarse powder. This does two things. It infuses the blend with a gorgeous, nutty aroma and adds an incredible, crunchy texture that clings to food perfectly.

Dialing Up the Intensity

Next comes the heat. If you can handle a serious kick, grind up a handful of dried Thai chilies. Be warned, though, these little guys pack a massive punch and might make you cough as they grind. If you prefer a milder sweat, you can easily substitute them with a mix of cayenne pepper and paprika.

In a large bowl, we combined our toasted rice powder and ground chilies with the rest of the powerhouse aromatics:

  • Lime Leaves: Ground down to bring a bright, herbaceous aroma.

  • Garlic Powder: For that essential savory backbeat.

  • Coconut Sugar: To balance out the intense heat.

  • Citric Acid: For a sharp, sour tang that wakes everything up.

  • Salt and Chicken Stock Powder: To provide a deep, rich umami base.

How to Use Your New Secret Weapon

Give everything a thorough whisk until the red chilies and golden rice are perfectly distributed. The final product is a stunning, speckled blend that smells absolutely phenomenal.

The Verdict: This is a total game-changer for your spice rack. I dusted a heavy coating of this Zabb seasoning over a freshly fried, crispy chicken cutlet. The crunch from the rice mixed with the sour, fiery kick of the spices made for an incredible bite.

Keep a jar of this on your counter. It is perfect for shaking over fried chicken, roasted vegetables, fries, or even fresh fruit.
