I wanted to challenge myself to push the limits of dairy. Putting a single slice of cheddar on a patty felt way too boring. I needed to go bigger. I wanted a burger where every layer brought a different texture and flavor from the cheese family. The result? Mind-blowing.
Crafting The Cheesy Masterpiece
I started with the cheese-infused brioche. This is just a regular brioche bun with some sharp cheddar cheese mixed right into the dough and sprinkled on top before baking. It creates a beautiful, golden crust. To add texture, I made a crispy cheese disk using gruyère and parmesan, dusting it with cheese powder afterward. For a much-needed hit of acidity to balance out all that rich fat, I quickly pickled some fresh sliced jalapeños.
