Low effort, great taste. That is what my rice cooker soy sauce chicken is all about. Look at this. Tender chicken, seasoned rice, and veggies. It is a complete meal in one pot.

When you get home after a long day, the last thing you want to do is baby a pan on the stove. I wanted something comforting that required almost zero cleanup. This method delivers exactly that. The chicken ends up so tender it literally falls apart when you touch it with a fork.

Loading Up the Pot

Literally all you need to do is throw some rice into your cooker. Wash it first, of course. Then, pour in some chicken stock, light and dark soy sauce, and a generous splash of oyster sauce. Drop in some crushed ginger and garlic, a little bit of sugar, sesame oil, and a dash of bouillon powder for that magic seasoning touch.

For the veggies, I like to add dried shiitake mushrooms because they bring some extra umami flavor to the party. I also toss in something hardy that can stand up to the cook time without turning into mush, like cauliflower florets or squash.

The Hands-Off Finish

Now, let us talk about the chicken thighs. You can give them a quick sear in a hot pan beforehand if you want extra color and a bit of caramelized flavor. Or, you can just skip that step entirely to keep this a true, effortless one-pot meal. Lay the chicken right on top of your rice and veggies, close the lid, and let it cook on the regular white rice setting.

Once the timer goes off, open the lid to find perfectly steamed, savory rice that has absorbed all those rich chicken juices. Plate it up, garnish with a handful of fresh sliced scallions, and you have an amazing meal ready to go.
