Then came the monster. The Birria Brunch Burrito. They take a giant flour tortilla, layer it with eggs, tater tots, fresh cilantro, onions, and cheese. Next, they add house-braised beef that melts in your mouth. But here is the kicker. They throw cheese directly onto the griddle so it bakes and crisps right onto the outside of the tortilla.
