Would You Try New Jersey’s Most Controversial Pizza Combo

I thought I had seen it all. Pineapple, pickles, ranch, you name it, but this discovery completely blew my mind. I took a trip to Middletown, New Jersey to check out Panko Pizza. They are doing something wild. They are putting mustard on pizza.
It sounds crazy. The reality? Unreal.
The Preparation
The magic starts with the crust. They take a fresh round of dough and coat the entire bottom in panko breadcrumbs. This gives the base an intense, elite level of crunch. Next comes the main event. They grab a massive jar of Gulden's Spicy Brown Mustard and swipe a thick layer across the dough. They spread it aggressively from edge to edge.
Instead of traditional shredded cheese, they top the mustard with heavy chunks of mozzarella cubes. Look at those blocks. Then they ladle a thick, seasoned tomato sauce right over the cheese. A heavy sprinkle of parmesan follows. They pack the top with thick cut pepperoni slices that curl up perfectly into little grease cups when cooked.
They slide the heavy pie into the blazing hot deck oven.

The Finished Pie
The result? Incredible.
The pizza comes out of the oven bubbling hot. The crust is beautifully charred and the pepperonis are perfectly crisp. When they slice into it, you can actually hear that panko crunch. It is insane.
Taking that first massive bite is an experience. The spicy brown mustard cooks down and combines with the sweet tomato sauce, completely changing the game. The acidity cuts right through the rich, fatty pepperoni. It feels like eating a deconstructed Italian hot dog but a million times better.
"It’s like a deconstructed hot dog, but better."
If you love bold flavors and want a serious crunch, this spot needs to be on your radar.
Have you ever tried mustard on a pizza, or is this where you draw the line?
