Is This Multi-Layered Masterpiece The Best Lasagna In New York City

When it comes to comfort food, a classic Italian bake is hard to beat. I thought I had experienced the pinnacle of comfort food, but a trip to the Flatiron District completely raised the bar. I went to Mark’s Off Madison in New York City to witness the creation of their legendary Lasagna Della Nonna.
It is a total work of art. The reality? Unreal.
The Assembly
The meticulous process begins with house-made pasta sheets. They drop the fresh sheets into boiling water, lift them out steam hot, and transfer them straight into an ice bath. Once rinsed, the sheets get laid down neatly inside a heavily buttered pan.
Then comes the incredible bolognese ragu. They aren’t shy with the meat, scooping up massive ladles and spreading it aggressively from edge to edge with a spatula. Next, they add a healthy drizzle of creamy bechamel sauce and a heavy coating of parmesan cheese.
They place another sheet of pasta on top and repeat the entire sequence. Layer by layer, they load it up with more ragu, more bechamel, and more cheese. They do this over and over, building a massive tower of flavor.
Once the final layer is set, they tuck in the sides of the pasta, cover the entire pan in plastic wrap and heavy foil, and slide it into the deck oven.

The Presentation
The result? Elite.
After the lasagna cools down from the oven, they slice it up into big squares. Look at those beautiful layers. They lift a perfect square out and place it right into a skillet that is already swimming in bright tomato sauce. They pour heavy cream directly over the top of the pasta block, add a heavy sprinkle of parmesan, and pop the skillet back into the hot oven to finish cooking.
It comes out bubbling aggressively.
They slide the square onto a clean plate and pour that rich, creamy tomato sauce right over the top. A final dusting of parmesan cheese, a sprinkle of fresh chives, and a vibrant drizzle of green pesto completes the dish.

Taking a massive bite of this thing is an out-of-body experience. The pasta is incredibly tender, and the meat ragu is packed with deep, savory flavor. The combination of the bechamel, heavy cream, and sharp tomato sauce creates a velvety texture that hits perfectly. It is insane. We have been devouring this pie for years now, and it never fails to blow our minds.
