Why This Viral Crustacean Crack Is Taking Over Your Feed

I thought I had seen it all in the New York City pizza scene. I was wrong. Completely wrong.
There is a wild food creation hiding out in Staten Island that is redefining what it means to be a slice of pizza. I took a trip out to Mimmo’s Pizza Shoppe, and my mind was blown. They are serving up a stuffed ricotta specialty pizza that is an absolute game-changer. It is massive. It is heavy. It is pure food heaven.

The process behind this masterpiece is a masterclass in food porn. It starts with their thick, airy Sicilian pizza dough. But they don't just throw toppings on it and call it a day.
They take a piping bag and aggressively stuff the inside of the dough with a massive, healthy amount of smooth ricotta cheese. They inflate the entire crust from the inside out.
Once the dough is fully loaded, they lay down a heavy blanket of sliced mozzarella cheese. Next comes the star of the show. They drench the cheese in their signature chunky vodka sauce. They slide it on thick.
Then they drizzle house-made green pesto right over the top, throw down a handful of parmesan cheese, and add a mountain of pepperoni.
"They oven bake it until the crust turns golden brown, the cheese melts completely, and the pepperoni cups curl up into perfect little grease pools."
The Ultimate Top-Off
Most pizzerias would stop there. Not Mimmo's.
After it comes out of the roaring hot oven, they take a giant knife and slice it up. Then they take massive handfuls of creamy, fresh burrata cheese and smash it right over the hot pepperoni.
To finish it all off, they hit it with freshly shaved parmesan cheese and a heavy drizzle of sweet, spicy hot honey.
The first bite is an absolute explosion. Look at that pull. The crunch of the Sicilian crust mixes with the sweet vodka sauce, the sharp pesto, and the heat from the honey. But then you hit the center. The warm, melted ricotta oozes out of the dough with every single chew. It is rich. It is messy.
It is just the right amount of cheese.
If you think you can handle this level of dairy dominance, head over to Staten Island. Bring an appetite. You are going to need it.
Who is hungry for a slice of this madness?
