I needed a dessert that required zero oven time but delivered maximum satisfaction. Something fast. Something rich. My mind immediately went to cookie butter. The deep, caramelized flavor profile of Lotus Biscoff is unmatched, and I knew it would make the perfect base for a dense, decadent truffle.

The result? Incredible.

I started by slicing open a jar of crunchy Biscoff cookie butter, exposing that thick, textured spread. Next, I emptied an entire package of Lotus Biscoff biscuits onto my cutting board. I brought down my heavy chef's knife, chopping the biscuits into a fine, sandy crumble with a sharp, rhythmic cadence.

Chop. Chop. Chop. 

To bind everything together, I dropped a block of softened cream cheese into a large glass mixing bowl. I dumped the cookie crumbs right on top, added a massive scoop of the crunchy cookie butter, and folded it all together with a wooden spoon until a thick, uniform dough formed.

I rolled the mixture between my palms, shaping them into smooth, perfectly round dessert bites. After setting them on a plate, I chopped a premium bar of white chocolate and melted it down over a double boiler until it was perfectly silky. I dropped each truffle into the white chocolate bath, coating them completely before lifting them out.

To finish them off, I drizzled melted cookie butter over the top and dusted them with the remaining biscuit crumbs. Cutting one in half revealed a dense, rich interior contrasted against the snappy white chocolate shell.
