Is This S'mores Bread Pudding The Ultimate Comfort Food

I wanted to take two classic desserts—gooey campfire s'mores and rich, comforting bread pudding—and combine them into one incredible dish. I needed something that felt indulgent, with a perfect balance of smoky, sweet, and chocolatey flavors. By layering soft brioche with caramel-filled dark chocolate and toasted marshmallows, I knew I could create a dessert that completely elevates the classic campfire treat.

The result? Incredible.

I started by slicing a premium block of Ghirardelli dark chocolate filled with caramel. I brought my knife down in a fast, rhythmic motion, chopping the chocolate into messy, bite-sized pieces so that the caramel leaked out onto the board.

Chop. Chop. Chop.

Next, I took a loaf of soft, braided brioche bread and cut it into thick slices before dicing them into uniform cubes. To capture that authentic campfire essence, I set up a small tabletop fire pit, poured in some fuel, and sparked a flame. I speared a large marshmallow on a fork and held it over the open fire, rotating it until the outside was perfectly charred, blistered, and bubbling.

For the custard base, I combined melted butter, granulated sugar, a few cracked eggs, a dash of vanilla extract, a splash of milk, and a heavy dusting of cinnamon in a glass bowl, whisking it into a smooth mixture. I opened a fresh bag of mini marshmallows to prepare the layers.

I grabbed a glass baking dish and began building the dessert. I laid down a base of the brioche cubes, poured over a generous amount of the spiced custard, and scattered mini marshmallows and chopped caramel chocolate chunks over the top. I repeated the process, adding another layer of bread, more custard, and a heavy final layer of marshmallows and chocolate until the dish was completely packed.

I slid it into the oven until the bread absorbed the liquid and the top became golden and crispy. Pulling it out, the chocolate was entirely melted and the marshmallows were beautifully toasted. I scooped out a massive portion, revealing a soft, gooey interior.
