I wanted to take a classic game-day snack and completely transform its texture and flavor profile. I needed something with an undeniable crunch on the outside and a rich, gooey center. By replacing traditional breadcrumbs with crushed Cool Ranch Doritos, I knew I could create a mozzarella stick that leaves ordinary appetizers in the dust.

The result? Incredible.

I started by ripping open a family-sized bag of Cool Ranch Doritos and emptying the chips onto a baking sheet. I covered them with a layer of plastic wrap and brought down a meat mallet, crushing the chips into smaller fragments. To get the perfect, fine coating, I transferred the broken pieces into a stone mortar and pestle and pulverized them into a textured dust.

Crush. Crush. Crush.

Next, I unwrapped a handful of low-moisture mozzarella string cheese sticks. I set up a standard dredging station with three glass dishes: one filled with all-purpose flour, one with a smooth egg wash, and the final one packed with the seasoned Dorito crumbs.

I rolled each cheese stick in the flour, submerged it completely in the egg wash, and then pressed it firmly into the crushed Doritos until it was completely coated. To ensure no cheese leaked out during the cook, I ran them through the egg wash and the Dorito crumbs a second time for a thick, double-layered crust.

I dropped the coated sticks into a pan of hot, bubbling oil. I fried them for just a couple of minutes until the exterior turned a deep, golden brown and the cheese began to soften. I pulled them from the oil with tongs, letting the excess oil drain, and piled them onto a plate with a side of cool ranch dressing.

Pulling one apart revealed an epic, stretchy cheese pull. Dipped in ranch, the combination of the tangy, herb-forward chip crust and the melted cheese was a perfect match.
