I wanted to take a classic summer dessert and completely flip the flavor profile on its head. I needed something bright, fresh, and slightly unexpected. By pairing a thick, buttery sugar cookie crust and sweet cream cheese frosting with fresh fruit and a heavy dusting of Tajín Twist Sweet & Spicy Seasoning, I knew I could create a fruit pizza that hits every sweet, tangy, and spicy note perfectly.

The result? Incredible.

I started by tackling the fresh fruit toppings on my cutting board. I grabbed a ripe strawberry, lopped off the green top, and ran my knife through it in a clean, swift rhythm, turning it into delicate, uniform slices.

Next, I sliced an orange into clean wedges and chopped a fuzzy kiwi into bright green rounds. To build the cookie crust from scratch, I emptied two sticks of melted unsalted butter into a glass bowl and loaded it up with granulated sugar, rich brown sugar, vanilla extract, a pinch of baking powder, and a cracked egg. I worked the ingredients together with a wooden spoon before folding in a generous mountain of all-purpose flour until a thick, smooth cookie dough formed.

I sprayed a round baking pan with oil and smoothed the tacky dough out into a perfect, even circle before sliding it into a hot oven to bake until golden. While the crust was cooling, I moved on to the remaining toppings, slicing fresh green grapes in half. For the frosting base, I combined softened cream cheese, butter, vanilla, and a heavy snowfall of powdered sugar in a bowl, using an immersion blender to whip it into a silky, glossy spread.

I slathered the sweet frosting over the cooled cookie crust from edge to edge. To introduce that signature kick, I grabbed a bottle of Tajín Twist and shook a heavy layer of the vibrant, red seasoning directly over the white cream cheese. I began layering the fruits, carefully arranging the strawberry slices, blueberries, kiwi wheels, orange wedges, blackberries, raspberries, and green grapes until the entire pizza was covered in a mosaic of colors.

Running a pizza cutter through the center revealed a perfectly baked cookie crust loaded with sweet cream and fresh fruit.
